Abstract

In this study, the Bluecrop, Aurora, Sierra, Liberty and Legacy varieties of blueberry (Vaccinium corymbosum L.) fruits were examined under convective drying at different temperature regimes (50, 60 and 70 °C). The duration of the drying process, the product yield and the final moisture content were analysed. The results showed that as the temperature rises the drying process accelerates, however the quality of the product and the content of biologically active substances decrease. The most optimal results were recorded at a temperature of 60 °C, under which conditions the organoleptic and physico-chemical indicators of the product are preserved at a high level.
