Abstract

This review analyzes three promising areas in the technology of obtaining biologically active substances (BAS) from plant raw materials for the food industry: ultrasonic treatment, membrane technologies and high hydrostatic pressure extraction. The physical principles of each method, the key optimization parameters, and the advantages and limitations are discussed in detail. Examples are given of their effective use in obtaining polyphenols, anthocyanins, saponins and other valuable compounds from agro-industrial raw materials intended for processing. It is concluded that these approaches are highly effective for creating “green” and resource-saving technologies for obtaining functional food ingredients.
