Economic assessment of veterinary and sanitary risks and justification of measures to ensure the safety of products of animal origin
Main Article Content
Abstract
The article examines the economic assessment of veterinary and sanitary risks and the justification of measures aimed at ensuring the safety of products of animal origin. The study considers biological, chemical and physical hazards that may occur during the production, processing, storage, transportation and distribution of meat, dairy, egg and other products of animal origin. Particular attention is given to veterinary control, laboratory monitoring, control of veterinary drug residues, product traceability and the application of HACCP (Hazard Analysis and Critical Control Points) principles as important instruments for preventing and reducing potential risks. The article also considers the economic comparison of preventive costs with possible losses resulting from veterinary and sanitary risks. The study substantiates the need for an integrated combination of veterinary, sanitary, technological and economic mechanisms to improve product safety and reduce potential economic damage.
