Technological features of vegetable drying processes

Abstract
This article examines the technological features of vegetable drying processes. The importance of drying technology as one of the effective methods of long-term vegetable storage is described. The study considered changes in process parameters depending on the type of vegetable, its initial moisture content, temperature, drying time and air velocity. The main stages of the drying process and the specifics of preliminary raw material preparation, sorting, washing, peeling, cutting and heat treatment were analyzed. In addition, the effect of the correct choice of drying temperature and time on the color, taste, nutritional value and storage stability of the finished product was shown. It is demonstrated that modern vegetable drying methods make it possible to preserve product quality, extend shelf life and reduce processing costs. The results of the study are aimed at improving the technology for efficient processing of vegetable raw materials and production of high-quality dried products.
