Abstract

Depending on the variety and genotype, the flesh of sweet potato storage roots can be white, yellow, orange, purple or other colors. Orange-fleshed varieties are distinguished by their richness in β-carotene, and purple-fleshed varieties by their richness in anthocyanins. Research has shown that the phenolic compounds, flavonoids, carotenoids, anthocyanins and other biologically active substances of sweet potato are associated with antioxidant, anti-inflammatory, antidiabetic and other biological activities. Soil fertility, moisture, temperature, planting date, seedling quality and the fertilization system are important in sweet potato cultivation.
