Methods of storing carrot and red beet roots

Abstract
The article describes the importance of carrot and red beet roots grown in Karakalpakstan for human health, as well as their nutritional properties. Data are provided on the harvest timing and storage methods for the long-term storage of carrot and red beet roots. It is shown that air temperature and relative humidity are of great importance for the long-term storage of root crops.
