Abstract

This review analyzes the mechanisms underlying the antagonistic activity of Lactiplantibacillus plantarum strains and their metabolites against foodborne pathogens Vibrio parahaemolyticus and Listeria monocytogenes. The paper covers direct cell displacement, surface property alterations, motility suppression, and Quorum Sensing (AI-2) inhibition. It examines biofilm disruption, downregulation of virulence genes, and metabolite-induced membrane permeability and metabolic shifts in target bacteria. Practical applications of L. plantarum metabolites in meat biopreservation are also discussed.
