Abstract

The antioxidant activity of 18 lactic acid bacteria strains against DPPH, superoxide anion, and hydroxyl radicals was evaluated. Lactiplantibacillus plantarum TK1 and KA3 showed high antioxidant activity. Their culture supernatants contained increased levels of glutamate, cysteine, and glycine, which are required for glutathione biosynthesis. The results indicate the high antioxidant and biotechnological potential of these strains.
