Биотехнологическая детоксикация афлатоксина B₁ в сухофруктах
Biotechnological detoxification of aflatoxin B₁ in dried fruits
Main Article Content
Abstract
This paper examines the theoretical and methodological aspects of biological detoxification of aflatoxin B₁ (AFB₁) in dried fruits using microorganisms and their enzymatic systems. The mechanisms of toxin adsorption by cell structures and enzymatic biotransformation are substantiated, emphasizing the need to assess the toxicological safety of degradation products.
