Effect of ellagitannins isolated from pomegranate peel on lactase enzyme activity in microorganisms
Main Article Content
Abstract
This thesis explores the theoretical and practical aspects of the effect of ellagitannins-extracted from pomegranate peel-on the activity of the enzyme lactase in microorganisms. Pomegranate peel is a natural raw material rich in polyphenolic compounds, including hydrolyzable tannins and ellagitannins. The influence of ellagitannins on microorganisms (Lactobacillus plantarum) and the activity of the enzyme lactase is described.
