GASTRONOMIC TOURISM AS A DRIVER OF SUSTAINABLE DESTINATION DEVELOPMENT: TRENDS, CHALLENGES, AND PROSPECTS

Abstract
Gastronomic tourism has emerged as one of the fastestgrowing niches within the global tourism industry, driven by increasing
consumer interest in authentic culinary experiences and local food
cultures. This paper examines the multifaceted role of gastronomy in
contemporary tourism, analyzing its economic contributions, cultural
significance, and potential as a tool for sustainable destination
development. Drawing on a systematic review of peer-reviewed literature
and case studies from leading gastronomic destinations — including
France, Italy, Japan, Peru, and Spain — this study explores the
mechanisms through which food tourism generates revenue, preserves intangible cultural heritage, and supports rural development. Findings
indicate that well-structured gastronomic tourism strategies can
substantially increase tourist spending, extend length of stay, and create
competitive advantages for destinations. The paper further discusses
emerging challenges including over-tourism, commodification of food
culture, and the impact of global food trends on local culinary identity.
Recommendations for destination managers and policymakers are
provided to harness the full potential of gastronomic tourism within a
sustainable development framework.
